English fudge

My Grandma always made the same kind of Christmas candy every year and I loved it (and still do!). It is originally called "English fudge" but I call it "Grandmas candy".

3 dl sugar
3 tbsp butter
2 dl cream
1 tbsp vanilla sugar
3 tbsp cocoa powder
50 g almond, peeled and chopped.

 
Mix all ingredients in a heavy-based saucepan. Bring to boil and boil until the mixture gets thicker. Stir all the time. Boil until it reaches the soft ball stage. Pour into a prepared tin and leave to cool in the fridge.  Once cold, cut the fudge into small squares an store in a sealed container. Enjoy!

I have also manged to make some traditional rice porridge for tomorrow, photos to be uploaded tomorrow.

The finished result, with and without camera flash... Tasted very yummy with the perfect texture! Not too "fudgy" but melts nicely in your mouth!!
