Thursdays are the beginning of our weekend (the UAE weekend stretches from Friday to Saturday, so Sunday is actually our first working day) so that normally calls for some more festive food or a nice BBQ. However, since husband had an early flight this (Friday) morning, we decided to cook some more traditional "husmanskost", Swedish everyday cuisine.
Meatlof or "kottfarslimpa" is not specifically Swedish but it is very popular in Sweden. It is an easier alternative than meatballs (just make a loaf and put it in the oven) but still yummy and the kids love it. I normally add chopped mushrooms, chopped parsley and some mustard and mix it with the rest of the ingredients. According to me, meatloaf is best served with boiled or mashed potatoes, gravy and Lingonberry jam!
